Milk Bread Recipe

Ingredients

1 cup milk
2 tsps sugar
2½ tsps yeast
2 eggs
4 tsps soft butter
4 cups flour
2 tsps salt
Whisked eggs for brushing
Rye or black cumin or sesame for garnish

Method

• Melt yeast in half cup of warm milk and sugar. Stir well and set aside to react for 10 minutes.
• Whisk eggs well in a deep bowl and add butter. Mix well.
• Mix flour with salt and add to the mixture of eggs slowly. Meanwhile keep kneading.
• Add the yeast mixture and knead for 10 minutes in a blender or 20 minutes by hands until it becomes firm and not sticky on the sides of the bowl.
• Place the dough in a greased tray and cover. Set aside in a warm place for 45 minutes or until it rises and doubles in size.
• Preheat the oven to 200 degrees centigrade.

Proposed forms of bread

• Divide the dough into three parts. Spread the dough on a lightly floured work surface and shape into small balls. Place in a tray providing we can control the dough when it rises.
• Roll into a fine cylinder and plait like a knot.
• Spread and shape like a long fine cylinder and tuck the two ends to become equal and twist them like a plait.
• Cut it into equal parts. Press them into a rectangular shape. Position the parts on top of each others, and tuck the ends under.
• Glaze with eggs and sprinkle rye or black cumin or sesame and leave to rise again for 45 minutes.
• Bake in a preheated oven to 200 degrees centigrade for 25 minutes or until baked well.
