145g (5oz) wild rocket or babyleaf salad
2 carrots, cut into matchsticks
1 red pepper, cut into matchsticks
2tbsp chopped pistachios
1 shallot, thinly sliced
100g (3½oz) feta, crumbled
2tbsp extra-virgin olive oil
1tbsp red wine vinegar
1tsp caster sugar
Place the salad leaves in a large serving bowl. Top with the carrot, red pepper, shallot and feta.
Combine the dressing ingredients in a glass jar with a lid, season and shake until sugar is dissolved. Pour over salad and toss before serving.
