Ingredients
1 kilo Akawi
2 Tbsps flour
1 Tbsp cooking oil
4 garlic cloves, chopped
1 medium sized onion, minced
1 cup carrots, chopped
1 cup water
1 teaspoon sugar
2 cups small onions
salt and pepper
fresh spices
thyme, parsley and celery
Method
• Preheat oven to 350 °F.
• Season Akawi meat with salt and pepper. Sprinkle flour over the meat.
• In a wide heavy saucepan, heat the oil over medium heat. Brown meat on both sides.
• Add chopped garlic, chopped onion, carrots and water
• Stir in fresh spices to the mixture. Cover and bring to boil.
• In a separate pan, heat sugar until syrup caramelizes.
• Add onion before sugar burns. Stir until a golden skin appears. Add the caramelized onion in the meat mixture.
• Place all in an oven of 350 °F for 40 minutes.
• Serve in large bowl and garnish.
Note: Akawi is the calf’s tail. It is considered a very delicious meat and the recipe can be served as a separate dish or with rice, potatoes or macaroni.
