Full of fresh zing, this green salsa is a must-have Mexican accompaniment.
Preparation Time
10 minutes
Ingredients (serves 6)
2 avocados, cut into 1cm pieces
1 shallot, trimmed, thinly sliced
2 tbs fresh lime juice
1 tbs extra virgin olive oil
1/3 cup chopped fresh coriander
Method
Combine the avocado, shallot, lime juice, oil and coriander in a bowl. season with salt and pepper.
Notes
Cook's tip: Tortillas aren't just for burritos and fajitas - spray them with oil and chargrill until golden then tear into them at any time during the meal.
