Vegetables Filled with Cheese Recipe

Ingredients

6 Tomateos, medium size
6 Mushroom, medium size
3 Tablespoons olive oil
2 Tablespoons lemon juice
Salt and pepper
1 Tablespoon vinegar
½ Cup carrot; peeled, boiled, and diced
½ Cup potato, boiled and diced
¼ Cup peas, boiled
2 Tablespoons parsley, chopped
2 Tablespoons dill, chopped
½ Cup mayonnaise
Black olive slices for topping

Method

-Cut off tomato tops, spoon out the flesh removing the seeds to form a cup shape
-Clean mushrooms with a damp paper towel, carfully break off steams.
-Whisk olive oil with lemon juice and vinger in a bowl, season with salt and pepper.
-Mix carrot, potatoes and peas in a bowl and season with oil mixture.
-Add parsley and dill, stir to combine.
-Add mayonnaise while stirring until well combined.
-Arrange tomatoes and mushrooms in the serving plate.
-Fill with vegetable mixture.
-Top with black olive and serve.
