Leftover rice is reinvented in this simple and tasty fried rice dish.
Ingredients (serves 4)
2 teaspoons olive oil
2 green onions, chopped
1 cup chunky frozen vegetables (see note)
2 cups cooked jasmine rice
1 tablespoon soy sauce
Heat oil in a large frying pan over medium-high heat. Add onion and vegetables. Cook, stirring, for 2 to 3 minutes or until onion has softened Add 2 tablespoons cold water. Cook, stirring, for 5 minutes or until vegetables are just tender. Add rice and soy sauce. Cook, stirring, for 2 to 3 minutes or until heated through.
Vegetable mix contains beans, carrot, broccoli and cauliflower.
