For a twist on regular avocado dip, try our yoghurt and sweet chilli version.

Preparation Time 15 minutes

Ingredients (serves 4)
1 cup (260g) Greek-style natural yoghurt
1 tbs lime zest
2 tsp lime juice
1 avocado, mashed
1 tbs sweet chilli sauce
2 tbs chopped coriander
Sea salt & cracked black pepper to taste
2 carrots, cut into sticks
1 red capsicum, cut into sticks
1 zucchini, cut into sticks
100g broccoli, cut into florets

Method
Place yoghurt, lime zest, lime juice, avocado, sweet chilli sauce and coriander into a medium-sized bowl. Stir to combine. Season with salt and pepper.

Place carrots, capsicum, zucchini and broccoli into a heat-proof bowl. Pour over boiling water and leave for 30 seconds. Drain and plunge into coldwater. Drain well.

Arrange blanched vegetables onto a serving plate. Serve with dip.

Cooking Time
15 minutes

Ingredients (serves 4)
250g (1 punnet) strawberries, washed, hulled, cut in half lengthways
2 tsp caster sugar
4 100g tubs D'Lite berry basket frozen yoghurt (Ski brand)

Method
Heat a large non-stick frying pan over medium heat. Add the strawberries and sugar, and cook, stirring, for 2-3 minutes until the strawberries are soft.

To serve, scoop the frozen yoghurt into serving bowls. Top with the warm strawberries.

Notes
Wine suggestion: A Kiwi sauvignon blanc will freshen up the fruit and spice in the main dish. You can't go wrong with Stoneleigh Marlborough Sauvignon Blanc, $17.50, or the Montana Reserve Sauvignon Blanc, $20.

Ingredients (serves 4)
1 Lebanese cucumber, coarsely grated
2/3 cup (180g) Farmers Union Greek-style natural yoghurt
2 teaspoons chopped fresh mint
Salt & freshly ground black pepper
1 teaspoons ground coriander
1 teaspoon ground cumin
1/4 teaspoon chilli powder
2 1/2 tablespoons olive oil
4 x 250g skinless salmon fillets
100g Woolworths baby Asian salad leaves
200g grape tomatoes
1 small red onion, halved, sliced
1 tablespoon fresh lemon juice

Method
Squeeze excess liquid from the cucumber. Combine the cucumber, yoghurt and mint. Season with salt. Set aside.

Combine the coriander, cumin, chilli and 2 tablespoons of the oil. Brush the spice mixture over both sides of the salmon. Heat a large frying pan over a medium heat. Add the salmon and cook for 3 minutes each side for medium.

Combined the salad leaves, tomatoes and onion. Whisk together the remaining oil and lemon juice. Season with salt and pepper. Add dressing to the salad and toss to coat. Serve with salmon and cucumber yoghurt.

Healthy dip that's great with bread or crackers.

Ingredients (serves 4)
400g canned chickpeas, rinsed and drained
1/4 cup olive oil
1/3 cup Greek-style yoghurt
1 1/2 tablespoons finely chopped coriander
salt and cracked black pepper

Method
Place chickpeas in a food processor or blender with 1 tablespoon warm water and process until finely chopped. With the motor running, pour olive oil in a thin, steady stream and process until smooth.

Remove chickpea mixture from the processor and fold through yoghurt, coriander, salt and cracked black pepper. Mix until well combined.

Serve drizzled with a little olive oil with toasted pita bread or pappadums.

Notes
This dip will last 3-4 days in the fridge.

Ingredients (serves 8)
1 tbs olive oil
1 brown onion, halved, finely chopped
300g baby spinach leaves
1 tsp ground cinnamon
1/2 tsp ground allspice
260g (1 cup) Greek-style natural yoghurt
Salt & freshly ground black pepper
Turkish pide, to serve (see related recipe)


Method
Heat the oil in a large frying pan over medium-low heat. Add the onion and cook, stirring, for 8 minutes or until soft. Add the spinach and cook, stirring, for 1 minute or until spinach wilts.

Add the cinnamon and allspice and cook, stirring, for 30 seconds or until fragrant. Remove from heat and set aside for 10 minutes to cool.

Combine the spinach mixture and yoghurt in a medium bowl. Season with salt and pepper. Transfer to a serving bowl and serve with pide.


Notes
You can make this dip up to 2 days ahead. Store in an airtight container in the fridge. Remove from fridge 15 minutes before serving to bring to r
oom temperature.

Makes 2 cups

Ingredients
1 garlic clove, crushed
1 teaspoon finely grated lemon rind
1/3 cup chopped mixed fresh herbs (mint, parsley and chives)
1 1/2 cups reduced-fat plain
Greek-style yoghurt

Method
Place garlic, lemon rind, herbs and yoghurt in a bowl. Season with salt and pepper. Stir to combine. Serve.

Notes

Serve dips with crackers, grissini (breadsticks), crostini, corn chips, crusty bread, Turkish bread, melba toast, pita chips, lavosh, or raw or cooked vegetables, or as part of an antipasto platter.

Serve dips sprinkled with chopped fresh herbs, such as flat-leaf parsley leaves, coriander leaves, thyme leaves, chives or basil leaves.

To store leftover dips, refrigerate in an airtight container for up to 5 days.

Use leftover dips as a tasty spread for sandwiches and wraps instead of butter.

1/3 cup chopped fresh mint
1 tsp caster sugar

Method
Process yoghurt, mint and sugar in a food processor until smooth. Transfer the mixture to a bowl. Cover with plastic wrap and place in the fridge for 4 hours or overnight to thicken slightly.

Notes

Serves 6 as a side.

Ingredients

1 Garlic clove finely chopped
3 Cups yoghurt
2 Cucumber, peeled seeded, finely diced
4 Cups butter milk
1 Tomato (big size), diced
3 Tbs almonds, toasted and grated
4 Tbs fresh mint, chopped or 2 Tbs dried mint
Salt and pepper

Method

- Add garlic, cucumber to yoghurt, stir until well combined.
- Stir buttermilk and tomato.
- Add grated almond, chopped mint, salt, pepper, mix well.
- Refrigerate soup for 2 hours until mixture is fully combined.
- Serve cold, decorate with fresh mint leaves.
