Lebanese Grilled Eggplant Dip Recipe

Serve this rich, smoky dip with pita chips, crackers, or crudités. If you don’t have any za’atar (a Middle Eastern spice blend), you can substitute 1/4 tsp. dried thyme.
1 large eggplant, trimmed and sliced lengthwise into 6 1/2-inch-thick slices
1 Tbs. extra-virgin olive oil; more for brushing
Kosher salt and freshly ground black pepper
1/4 cup tahini
1/4 cup Greek yogurt
3 Tbs. fresh lemon juice
1 tsp. minced garlic
1/4 tsp. za’atar
Aleppo pepper or paprika

Prepare a medium-high (425°F to 450°F) gas or charcoal grill fire. Brush the eggplant slices with oil and season with salt and pepper.

Grill the eggplant until grill marks form on one side, about 3 minutes. Flip the slices and continue to grill until the eggplant is tender, about 2 minutes more.

Put the eggplant in a  food processor with the tahini, yogurt, lemon juice, garlic, za’atar, remaining 1 Tbs. oil, and 1/2 tsp. salt. Pulse until well combined; there should be very small pieces of eggplant visible.

Season to taste with more salt and let sit for at least 15 minutes before serving to let the flavors meld. Garnish with a sprinkle of Aleppo pepper or paprika.

The spread can be made and refrigerated up to 1 day ahead.Return to cool room temperature to serve.

Preparation Time 10 - 70 minutes

Ingredients (serves 6)
85g (1/2 cup) pitted green olives, coarsely chopped
1 avocado, halved, stone removed, peeled, finely chopped
1 tbs finely chopped pickled sliced jalapenos
1 tbs finely chopped fresh chives
1 tbs fresh lemon juice
Quesadillas, to serve

Method
Combine the olive, avocado, jalapenos, chives and lemon juice in a bowl. Cover with plastic wrap and set aside for 1 hour to develop the flavours. Serve with the quesadillas.

Notes

Serves 6 as an accompaniment. To make these salsas kid friendly, omit the red onion and chilli from the tomato salsa, and the jalapenos from the avocado salsa.

Ingredients (serves 4)
6 corn tortillas, each cut into 6 wedges
light olive oil spray
1 large ripe avocado, halved, stone removed
1 tablespoon lime juice
1 ripe tomato, diced
1/2 small red onion, finely chopped
1/4 cup fresh coriander leaves, finely chopped

Method
Preheat oven to 170°C. Spread half of the tortillas over 2 large baking trays. Spray with olive oil spray. Bake for 7 to 10 minutes, or until golden. Repeat with remaining tortillas.

Meanwhile, mash avocado and lime juice. Stir in tomato, onion and coriander. Season with salt and pepper. Place in a small serving bowl.

Serve avocado dip with corn chips.

Preparation Time 15 minutes

Ingredients (serves 4)
1 cup (260g) Greek-style natural yoghurt
1 tbs lime zest
2 tsp lime juice
1 avocado, mashed
1 tbs sweet chilli sauce
2 tbs chopped coriander
Sea salt & cracked black pepper to taste
2 carrots, cut into sticks
1 red capsicum, cut into sticks
1 zucchini, cut into sticks
100g broccoli, cut into florets

Method
Place yoghurt, lime zest, lime juice, avocado, sweet chilli sauce and coriander into a medium-sized bowl. Stir to combine. Season with salt and pepper.

Place carrots, capsicum, zucchini and broccoli into a heat-proof bowl. Pour over boiling water and leave for 30 seconds. Drain and plunge into coldwater. Drain well.

Arrange blanched vegetables onto a serving plate. Serve with dip.

Combine salad leaves, avocado, onion and cucumber in a bowl. Place lemon juice and oil in a screw-top jar. Season with salt.

Preparation Time 10 minutes
Makes 1 1/2 cups

Ingredients
Flesh of 2 avocados
Juice of 1/4 lemon
1 garlic clove, crushed
1 vine-ripened tomato, seeds removed, chopped
1 small Lebanese cucumber, chopped
1/4 bunch coriander, leaves chopped
Vegetable or taro chips* and carrot sticks, to serve

Method
Using a fork, mash avocado in a bowl with the lemon juice and crushed garlic - the mixture should still be chunky. Stir in tomato, cucumber and coriander, then season with salt and pepper to taste. Serve with chips and carrot sticks.

Notes

* From health food shops and selected supermarkets.

Salmon and avocado rice balls recipe

16 

Ingredients 

2 cups sushi rice, rinsed
5 tablespoons sushi seasoning (we used Mitsukan brand)
1/2 small avocado, peeled, stone removed
1/2 small lemon, juiced
1/2 carrot, finely chopped
1/4 Lebanese cucumber, finely chopped
50g sliced smoked salmon, chopped
3/4 cup sesame seeds, toasted
soy sauce, to serve 

Method 

Place rice and 2 cups of cold water in a medium saucepan. Bring to the boil over medium heat. Reduce heat to low. Simmer, covered, for 15 minutes or until rice is just tender. Remove pan from the heat. Set aside, covered, for 10 minutes.

Add sushi seasoning to rice. Using a fork, gently fold through rice. Spread rice mixture over a large tray lined with baking paper. Set aside for 1 hour or until rice has cooled.

Mash avocado and lemon juice together in a bowl. Using damp hands, divide rice into 16 equal portions. Place on a large board lined with baking paper. Using fingertips, press each rice portion into a 1cm-thick round.

Spoon 1 teaspoon of avocado mixture in the centre of each round. Divide carrot, cucumber and salmon between rounds. Fold rice mixture around filling to form a ball. Roll balls in sesame seeds. Place on a large tray. Cover and refrigerate for 1 hour. Serve with soy sauce. 

Notes 

For an extra flavour 'kick', you could spread the rice rounds with a little wasabi paste and top the salmon with a slice of pickled ginger before rolling into a ball.

Pickled ginger, or gari, traditionally is used to refresh the palate between pieces of sushi. It's made by marinating finely-sliced ginger in rice vinegar, water and sugar. You can find it in the Asian section of your supermarket.

Ingredients (serves 8)
2 teaspoons olive oil
1/2 cup pine nuts, roughly chopped
2 avocados, peeled, thickly sliced
1 tablespoon lemon juice
2 baby cos lettuces, trimmed
2 tablespoons extra virgin olive oil
3 teaspoons white wine vinegar

Method
Heat olive oil in a small frying pan over medium heat until hot. Add nuts. Cook, stirring, until golden. Drain on paper towels.

Drizzle avocados with lemon juice.

Arrange lettuce leaves on a large serving plate. Top with avocado. Combine extra virgin olive oil, vinegar, and salt and pepper in a screw-top jar. Shake well. Drizzle over salad. Sprinkle with pine nuts. Serve.

Notes

Serves: 8 as a side dish

Avocados are a nutrient powerhouse and rich in beneficial fats. But the best news is that they taste fantastic, especially in this easy, kid-friendly recipe!

Ingredients (serves 4)
2 (340g) chicken breast fillets, halved lengthways
1/2 cup plain flour
2 tablespoons milk
2 eggs
1 1/2 cups dried breadcrumbs
Olive oil cooking spray
1/2 cup tomato pasta sauce
1 medium avocado, sliced
1/2 cup grated reduced-fat mozzarella cheese
Salad leaves, to serve

Method
Preheat oven to 220°C/200°C fan-forced. Line a large baking tray with baking paper.

Place chicken between 2 sheets plastic wrap. Using a rolling pin, pound until 5mm thick. Place flour on a plate. Lightly whisk milk and eggs together in a shallow bowl. Place breadcrumbs on a plate.

Coat 1 piece chicken in flour, shaking off excess. Dip in egg mixture. Coat in breadcrumbs, pressing on to secure. Place on prepared tray. Repeat with remaining chicken, flour, egg mixture and breadcrumbs. Spray chicken with oil. Bake for 5 minutes. Remove from oven. Top each with 1 heaped tablespoon pasta sauce. Arrange avocado over sauce. Sprinkle with cheese. Return to oven. Bake for 5 to 7 minutes or until golden and chicken is cooked through. Serve with salad.

Notes
Cooking class: Breading: Place flour, egg mixture and breadcrumbs in separate dishes. Place dishes in a row on bench. Lightly coat chicken, one piece at a time, in flour, then egg mixture and finally breadcrumbs, pressing breadcrumbs on firmly to secure.

4 Lebanese bread rounds, cut into wedges
Olive oil cooking spray
310g can corn kernels, drained
125g cherry tomatoes, quartered
2 green onions, thinly sliced
2 avocados, peeled, cut into 1.5cm pieces
1/4 cup roughly chopped fresh coriander leaves
1 tablespoon lemon juice
1 tablespoon lime juice

Method

Preheat oven to 200°C/180°C fan-forced. Place bread, in a single layer, on 2 baking trays. Spray with oil. Season with salt and pepper. Bake for 10 minutes or until golden and crisp. Cool. Store in an airtight container.

Combine corn, tomato, onion, avocado, coriander, lemon juice and lime juice in a bowl. Season with salt and pepper. Toss to combine. Serve with toasted bread.

Notes

Store toasted bread in an airtight container at room temperature. Store dip in an airtight container. Chill until ready to serve.

Ingredients (serves 8)


450g loaf Turkish bread
olive oil cooking spray

Avocado dip
2 avocados, peeled, stones removed
1 small lime, juiced
1 tomato, finely chopped
1 garlic clove, crushed
3 green onions, thinly sliced

Method


Preheat oven to 180°C. Cut bread into 4 pieces. Cut each piece in half through the centre. Roll out each piece of bread with a rolling pin to flatten slightly. Cut into short fingers. Arrange bread on 2 baking trays. Spray lightly with oil. Bake for 15 minutes, or until toasted.

Make dip: Use a fork to mash avocados until almost smooth. Stir in lime juice, tomato, garlic and green onions. Season with salt and pepper.

Serve avocado dip with Turkish chips.

Cook's tip: Tortillas aren't just for burritos and fajitas - spray them with oil and chargrill until golden then tear into them at any time during the meal.

Place avocado in a small bowl and use a fork to mash until almost smooth. Add yoghurt and cheese, and stir until the mixture
 is well combined. Transfer to a serving bowl and serve with rice crackers.
